The Focaccia Series: Serrano Ham Bocadillos with Extra sharp Cheddar and Pesto tomato sauce
Hi there. Welcome to the very first installment of this series of recipes focused on the infinite uses of focaccia. Today we are starting with a very simple snack that has some Italian vibes to it. Let’s dig in!
This simple sandwich recipe is really surprising. With a few very simple ingredients you can prepare in a few minutes a snack that is so savory, it will make you travel to some Mediterranean country. It has notes of Italy and Spain. The focaccia is a great bread for sandwiches, its soft, fluffy texture makes it a very special sandwich bread. If you never had it you must try. It’s has been a game-changer for me. Now I always keep some focaccia in the freezer ready to be toasted 🙂
Focaccia Serrano ham bocadillo
Equipment
- A toaster oven, hot pan, comal or toaster to toast the focaccia.
- Knife
- Cutting board
Ingredients
- 2 tbsp Pesto with dehydrated tomatoes If you can't find it, a nice tomato sauce will do.
- 1 slice Serrano ham
- 150 grms Sourdough Rosemary Focaccia
- 30 grms Extra Sharp cheddar You can replace with other cured cheese
Instructions
- Slice the focaccia lenghwise and toast the two pieces lightly.
- Spread the pesto with tomatoes. If you don't have this you can use tomato sauce, plain pesto, or a combination of both
- Cut some thin slices of extra sharp cheddar or other strong cheese you can find. We buy ours from our friends at Quesos Ixchel
- Add some cured ham on top
- Close the sandwich and enjoy as is or dice it to enjoy a bite-size bocadillo
